Body Solutions Healthy Bean Salad

Looking for a healthy dish to pack for a 4th of July cookout? Try out this three bean salad recipe:

  • 2 cans black beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed


  • 1/2 bag frozen corn
  • 1 can peas, no sodium, drained and rinsed (can also be frozen)
  • 1 organic medium tomato, chopped
  • 1/2 cup red onion, chopped


  • 1/2 cup water
  • 3 tbsp. white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 packet Good Seasons italian seasoning

Combine the water, vinegar and seasoning packet. Whisk together. Whisk in oil. Pour over bean and veggie mixture and stir well to coat. Cool before serving.


The benefits:

-Beans add fiber and plant protein to your diet. Black beans on their own are loaded with potassium. In fact, just half a cup of black beans provide more potassium than a medium banana.
-Peas add extra protein along with high levels of vitamin C. You can get over 50% of your daily intake of vitamin C in half a cup of peas, if eating less than 2000 calories a day.
